Have you ever had one of those days where you look at your fridge and think, “What on earth am I going to do with all this?” Yep, me too! That’s exactly where this Crockpot kitchen sink casserole comes in to save the day. It’s one of those recipes that feels like a satisfying, hearty meal after a long day—and the best part? You just throw everything in the crockpot and let it work its magic.

I call it the “kitchen sink” casserole because it’s basically a little bit of everything—ground beef, veggies, rice, and cheese—all simmered together into pure comfort food bliss. It’s absolutely perfect for those nights when you just want to set it and forget it. Plus, it’s a great way to use up whatever veggies you have hanging out in your crisper drawer.

Let’s also just appreciate how easy it is to throw together! No fancy ingredients, no complicated steps—just good old-fashioned comfort food that practically makes itself.

Whether it’s a busy weeknight or a lazy Sunday, this dish has you covered. Your whole family will be asking for seconds (and maybe even thirds), and you’ll feel like a total rockstar for whipping it up with minimal effort.

This is truly one of those magical recipes that turns a bunch of seemingly random and everyday ingredients into something truly delicious and comforting. Whether you’re feeding a hungry family or just looking to meal prep for the week, this dish has your back.

The best part? You can easily switch things up with whatever you’ve got on hand—swap the ground beef for turkey, add in some bell peppers, or even top it with a little extra cheese! This is truly a customizable dish!

Helpful Tips and Substitutions

  • If you don’t have access to red potatoes, you can use russet potatoes, sweet potatoes, or even a mix of both. Feel free to toss in extra veggies like bell peppers, zucchini, or mushrooms to make it even heartier.
  • While ground beef works great, you can easily swap it out for ground turkey, chicken, or even plant-based ground meat if you’re looking for a lighter or vegetarian option.
  • Cheddar cheese is classic, but feel free to use whatever you have on hand—mozzarella, Colby Jack, or even a little pepper jack if you like a kick!
  • Want to kick things up a notch? Sprinkle in a bit of smoked paprika or chili powder when browning the ground beef for a bit of smoky heat.
